
I’ve used tons of gluten free cinnamon rolls recipes over the year, tweaking them to figure out what works best for me. This recipe has to be one of my favorites so far! It’s super quick and easy and makes a great Sunday brunch or breakfast for any special occasion. If you don’t have any dairy free products, you can absolutely just use normal ones in place of what I used in this recipe.

Makes about 8 cinnamon rolls
YOU WILL NEED:
•A saucepan
•A large bowl
•Pie dish
INGREDIENTS:
ROLLS:
•1 cup oat milk + 1/4 cup
•1 Tablespoon instant yeast
•2 large eggs, room temperature
•1/2 cup coconut sugar
•1/4 cup coconut oil, melted
•2 teaspoons vanilla extract
•1/2 teaspoon salt
•1 teaspoon baking powder
•3 cups gluten free flour
FILLING:
•1/2 cup coconut sugar
•1/2 cup coconut oil, melted
•1 Tablespoon ground cinnamon
•1/2 teaspoon salt
FROSTING:
•3 Tablespoons dairy free cream cheese, softened (you can also use just regular cream cheese!)
•3 Tablespoons coconut oil, melted
•1/4 cup confectioners sugar
•1 teaspoon vanilla extract
DIRECTIONS:
1.) In a small saucepan, bring 1 cup of oat milk to a simmer. Pour into a large bowl and sprinkle the instant yeast over it. Set aside and allow to proof. (You will know it is ready when it is foamy and bubbles are forming. )
2.) After the yeast has proofed, add in the 2 eggs, mixing thoroughly. Then, add in the coconut sugar, coconut oil, salt, and vanilla extract.
3.) Add in the flour and baking powder, and mix for about 3-5 minutes, or until the batter is slightly less sticky. Cover the bowl with a slightly damp towel, and place in a warm spot to allow to rise. This will take about 30-45 minutes.
4.) After the dough has risen, gently roll out onto a well-floured surface. Prepare the filling and lightly spread over the dough. Roll up the dough and cut into 1 inch wide rolls. Place into a greased and lightly floured pie pan. Cover with the damp towel and allow to rise another 20 minutes in a warm spot.
5.) While the dough is rising, preheat the oven to 350ºF. Then, place in the oven and bake for 12-15 minutes. When the rolls are done, bring 1/4 cup of oat milk to a simmer, then drizzle the rolls with the oat milk and allow to cool.
6.) To make the frosting, beat together the cream cheese and coconut oil until light and fluffy. Then add in the confectioners sugar and vanilla. Slather over the cinnamon rolls and enjoy!

I like that that they are dairy free, now if we can only make a calorie free so I could eat more of them. Thanks for the recipe.
