
I have never made this dessert but I’ve heard of it before so figured I would give it a try. The traditional recipes use cherries, but as I didn’t have any on hand I thought I would try with blueberries. The name might make you think the recipe is complicated but in fact it’s very easy and of course delicious!

YOU WILL NEED: 1, 9-inch pie dish
INGREDIENTS:
DRY:
•1/2 cup gluten free flour mix
•1/2 cup granulated sugar
•1 cup blueberries
•1/8 teaspoon salt
WET:
•3 eggs
•2 tablespoons butter, melted and cooled slightly.
•1 cup whole milk
•1 teaspoon vanilla extract
DIRECTIONS:
1.) Preheat oven to 350ºF. In a large bowl, whisk together the eggs, sugar, melted butter, milk, vanilla extract , and salt. Add in the flour and whisk until smooth. Pour into the pie dish.
2.) Bake for 35-40 minutes, or until the top of the clafoutis is golden brown. Cool to room temperature and lightly dust with confectioners sugar.
3.) Store, covered in the fridge for up to 2 days.
