
This recipe simply melts in the mouth and is the perfect light and airy dessert. Pavlova’s are a typical Australian Christmas dessert because of how hot it is usually there! If you follow the instructions well, it is quite easy to make this simple and delicious dessert. You can also feel free to swap out the pears for any fruit of your choice.

INGREDIENTS:
MERINGUE:
ā¢6 egg whites
ā¢340 grams granulated sugar
WHIPPED CREAM:
ā¢1 cup heavy cream
ā¢2 tablespoons confectioners sugar
ā¢1/2 teaspoon vanilla extract
ROASTED PEARS:
ā¢5-6 small pears
ā¢1/2 teaspoon ground cinnamon
ā¢1 teaspoon granulated sugar
ā¢Handful fresh blackberries
DIRECTIONS:
1.) Preheat oven to 350ĀŗF and cut up 5 of the pears into quarters. Place on a sheet tray lined with baking parchment and sprinkle with the ground cinnamon and 1 teaspoon of granulated sugar. Bake for 12-15 minutes in the oven or until soft. They are ready if a knife inserted into them comes out easily. Cool to room temperature.
2.) In the bowl of a stand mixer, whisk the egg whites until they reach soft peaks. Add in the sugar, 1 tablespoon at a time until all the sugar has been added. You want to do this step very slowly so you don’t knock too much air out of the egg whites. Whisk until the egg whites have reached stiff peaks and are glossy.
3.) Draw an 8 inch circle on baking parchment, and flip over and use a slight amount of the meringue to glue the edges to a large sheet tray. Arrange the meringue in the circle and use a spatula to create decoration along the sides of the meringue. Create a small well in the center of the meringue: this will be where the toppings go.
4.) Lower the temperature of the oven to 200ĀŗF and bake the meringue for 2 hours. After it has cooked for 2 hours, turn the oven off and leave the meringue to cool in the oven. Crack the oven slightly by inserting a wooden spoon in the oven to allow it to stay open while the meringue cools with the oven.
5.) After the meringue has cooled, whip the cream to soft peaks with the confectioners sugar and vanilla, and spread over the top of the meringue. Arrange the roasted pears over the top of the whipped cream. Cut the un-roasted pear up and arrange with the roasted pears. Add the blackberries on top, and edible flowers if you desire.
6.) Serve in slices and store in the fridge.
