Gluten Free Apple Spice Muffins (refined sugar free)

There’s always that time in the early to mid afternoon when you find yourself craving something sweet to hold yourself over until dinnertime. These muffins are a bit of a healthier treat to enjoy and are so simple to whip up! If you don’t have all the individual spices that I listed in this recipe, you can totally just use a pumpkin pie spice mix, and use a 1 teaspoon and half of it.

Ingredients

  • 2 medium apples peeled and diced into small 1/2 inch cubes (I used Macintosh, but use whatever apple you have on hand)
  • 1 1/2 cups gluten free flour
  • 2 large eggs
  • 1/2 cup coconut sugar
  • 1/2 cup whole milk can also substitute with dairy free milk
  • 1/3 cup coconut oil melted, and slightly cooled
  • 1/4 cup plain yogurt
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/8 tsp ground cloves

Instructions

  • Preheat oven to 350ºF and line the muffin tray with muffin liners. You will need 12.
  • In a large bowl, whisk together the coconut sugar, eggs, and coconut oil, until well combined and fluffy. Then, add in the chopped apples, milk, yogurt, and vanilla extract. Mix thoroughly and until there are no lumps.
  • In a separate small bowl, whisk together the remaining dry ingredients. Slowly add into the remaining batter and mix well. Divide the batter evenly between the 12 muffin liners.
  • Bake for 18-20 minutes, or until a tester inserted into the center of the muffin comes out clean.
  • Store at room temperature in an airtight container.
